The pre-cooked rice usually takes around five to six minutes to cook in highly boiling water. The gelatinization temperature ranges somewhere between 55 and 79°C in case of high-quality rice. On the other hand, the intermediate gelatinization temperature range is between 70 and 74°C and it is the most preferred variety.
Usually, some types of rice are more elongated than other rice varieties. One of the most desirable characteristics of basmati rice grain quality is its elongation ratio. The rice exporters in India check the ratio of fully cooked rice grain length to raw rice grain length. Often 100% elongation ratio is obtained in high-quality organic basmati rice.
